Sodium nitrite is a preservative in processed meats (hot dogs, bacon, deli meats). When exposed to heat or stomach acid, nitrites can form nitrosamines — compounds classified as probable human carcinogens. The WHO has classified processed meat as a Group 1 carcinogen.

BHA (butylated hydroxyanisole) is a synthetic antioxidant preservative. The National Toxicology Program has determined it is "reasonably anticipated to be a human carcinogen." It is also a potential endocrine disruptor. The EU restricts its use.
